
I like my tea hot, with lots of milk and sugar. The Hong Kong style milk tea is one of my favourites. Now being in Otley, my choice of tea is the Yorkshire tea.
I thought I knew more about tea than I knew about coffee. My volunteering work at the Otley Courthouse Cafe involves the making of both tea and coffee. I made sure I could get someone to teach me how to make the latter, because as I told you, I was pretty confident that I could make a decent cup of tea.
,And so I learned how to brew filtered coffee on my first day, thanks to my fellow volunteer, Pam. One packet of ground coffee to make one pot of filtered coffee. And please beware of the hot plate that is for warming the coffee.

I’ve served only a small number of coffee to customers during my first five weeks of volunteering. Customers are few, which is not a bad thing given that I am still learning who to work in a cafe, still struggling with the cashier machine.
One Friday, I got an order of a mug of tea. I opened the drawer for a tea bag, get a mug from the shelf, put in the tea bag, pour hot water… And then I hesitated. Should I leave the tea bag in or should I take it out before I bring it to the customer?
